Something sweet, something fried & something boozy, this easy semi-homemade recipe for Bourbon Peaches & Beignets is a great way to serve a crowd without ever having to touch the oven.

RECIPE OVERVIEW

Be sure to use newly ripened peaches, that aren’t too soft. If they aren’t available, frozen ones will work just fine.

Over medium heat, melt butter. Add peaches and toss around until completely coated in butter.

Once peaches begin to warm, add in the brown sugar, flour & cinnamon. Let cook until peaches are softened and there is a nice syrupy sauce. Stir occasionally.

Tip: you want the peaches to be soft enough , but not overcooked where they break apart.

When peaches are cooked, pour in bourbon. Let cook for 1 minute, then remove from heat.

Cut biscuits into quarters. Deep fry until golden.

Tip: Flatten out biscuits if they’re thick so they’re not raw in the middle after browning.  You can also cut them in half to reduce their thickness.

Strain fried biscuits ‘beignets’. In a small bowl combine 2 TBSP sugar with 1 tsp cinnamon.

Toss warm beignets in the cinnamon sugar.

To serve, spoon over peaches over beignets & top with a scoop of vanilla ice cream.
