Brown Butter Rice Krispies Treats

Browned butter gives this childhood treat a touch of sophistication.  The pastel pink color also helps distinguish these Rice Krispies from the ordinary.

RECIPE OVERVIEW

Melt butter in a sauce pan over medium heat. Swirling occasionally, cook until butter turns a light brown color. The milk solids will have sunken to the bottom, and burned.

Strain the clear browned butter pouring carefully to be sure none of the burnt solids get in. A cheesecloth can be used to strain the butter. Using a pastry brush, use a small amount of the brown butter to grease a 9 x 13 baking pan.

Pour marshmallows into a large microwave safe bowl. Mix with brown butter and microwave on high for 1 minute 30 seconds.

Mix well, immediately adding in 2 drops of food color. Stir until well blended.

Add in cereal. Gently stir using a soft rubber spatula to be sure to not crush the cereal.

Once blended. Pour into the greased pan. Using the spatula, gently press down until its at a compressed even layer. Let sit out until firm. Cut into rectangles. Store at room temperature.
