Chipotle Black Bean Nachos

It seems that everyone has their favorite part of the Super Bowl, but the food… the most essential ingredient, tops it all….food never betrays. There are certain items that you can expect to have every year: wings, beer, & nachos!

Super Bowl Sunday is upon us once again. As usual,  I am overjoyed with the anticipation of all the delicious junk food I get to make for my friends to consume while we watch the game.  If you break down the event, there are three elements toSuper Bowl: 1.) The Game 2.) The Food 3.) The Halftime Show.

Not wanting to leave the vegetarians out of all the fun, I decided that this year I’d make vegetarian nachos. Considering that I’m also having crab jalapeño poppers, buffalo chicken dip & chicken wings, leaving steak off my nachos didn’t seem like that big of a sacrifice.

So instead of doing my original idea of chipotle marinated beef, I did chipotle black beans. Beans are one thing that I’ve never cared for on nachos, but after having a detailed discussion about what makes perfect nachos, I challenged myself to make a game day nacho recipe with beans that I actually wanted to eat.

Tip: If you like really cheesy nachos, double the cheese sauce. 


RECIPE OVERVIEW

Tip: You will want to assemble these nachos fairly quickly so that they stay hot. To help, have all your items prepped before you start cooking.

In a medium sauce pan, cook the onion in the olive oil over medium heat.

While the onions are cooking, strain and rinse the beans.

Add the rinsed beans to the onions, along with the garlic and chipotle peppers. Season with salt and pepper. Once beans are warmed though, cover and remove from heat.

Arrange tortilla chips on it’s serving platter.

In a separate sauce pan prepare the queso, by combining the butter, milk & cheese. Melt over medium heat. Season with onion powder and cumin. Stir constantly until a combined smooth mixture.

Immediately pour queso over chips, followed by beans, tomatillo salsa, queso fresco, jalapeños & cilantro.

  • 8 oz tortilla chips
  • 1 15oz can of black beans
  • 1/2 cup yellow onion, chopped
  • 2 TBSP canned chipotle peppers, minced into a paste
  • 2 cloves garlic, minced
  • kosher salt & black pepper to taste
  • 1/2 lb pepper jack cheese
  • 1/2 cup milk
  • 1 TBSP butter
  • 1 tsp onion powder
  • 1 tsp cumin
  • 1/3 cup tomatillo salsa
  • 2 oz queso fresco
  • 2 red jalapeños, thinly sliced
  • 1 TBSP cilantro

Instructions
