Canned tuna isn’t just for sandwiches slathered in mayonnaise. This French nicoise salad is nutrient packed and crazy delicious. Could a summer dish be any more perfect?

Have all your salad ingredients repared.

Tip: By having ingredients all ready to go, you are able to assemble your salad quickly after tossing to prevent from the lettuce leaves from wilting before eating/serving.

Lightly season lettuce with salt & fresh black pepper.

For the dressing I like using a simple French vinaigrette. This French vinaigrette recipe by David Lebovitz, it my go to salad dressing.

Toss lettuce in dressing & plate.  Separately toss green beans & potatoes in reserve dressing.  Neatly arrange the ingredients on top of the lettuce.

 

My Perfect Niçoise Salad

Ingredients

  • 5 oz mesclun lettuce
  • 1 can yellowfin tuna in olive oil (make sure its good quality)
  • a handful of green beans (aprox. 15) trimmed, halved & blanched
  • 5 baby red potatoes, boiled & halved
  • 1/4 cup cherry tomatoes
  • 1 hard boiled egg, sliced
  • 1 radishes, thinly sliced
  • 1/4 cup niçoise olives, pitted
  • 1/4 cup French vinaigrette, 1 TBSP reserved

Instructions
