Basil & Pine Nut Pesto

Basil & Pine Nut Pesto

  • 4 oz fresh basil leaves
  • 1/4 cup pine nuts
  • 1/2 cup Parmesan cheese
  • 2 garlic cloves, roughly chopped
  • extra virgin olive oil
  • kosher salt to taste


  1. Lightly toast pine nuts in a small, dry saucepan until lightly golden. No oil is needed.
  2. Add the remaining ingredients, except the olive oil into a food processor and pulse until leaves and nuts are small & is very thick. As it thickens up, drizzle in the olive oil until it is smooth running.
  3. Put into a bowl or container, and drizzle with olive oil until ready to serve.
